The tapered design of this saucepan is no accident since it was manufactured to reflect its ancestor, designed two centuries ago.
Its shape provides for compact storage, saving considerable space in your cupboards.
Thanks to the efficiency of its heat-diffusing base in three superimposed layers (induction stainless steel - aluminum - 18/10 stainless steel), this induction-compatible saucepan guarantees rapid, even heat distribution over the entire surface of the base, ensuring optimal cooking.
Its stainless steel 1-ply body ensures good temperature retention when serving food.
The ergonomic, heat-resistant handle, firmly riveted to the body, does not heat up on induction and glass-ceramic hobs, avoiding the risk of burns while guaranteeing a comfortable, secure grip. In addition, its polished stainless-steel finish provides an elegant contrast to the rest of the brushed-finish stainless steel structure.

BEFORE USING IT FOR THE FIRST TIME, wash your CRISTEL product in very hot water with liquid dish soap, rinse thoroughly, and dry.
Cooking: The CRISTEL thermodiffuser base or multiclad construction are made of 3 to 5 separate layers of material, thereby guaranteeing optimal heat distribution.
Once the desired temperature has been reached, REDUCE the heat source to avoid overheating your ingredients.
If cooking with GAS, make sure that the flame never extends beyond the thermodiffuser base.
Fat-free cooking with an Stainless Steel base: Preheat your CRISTEL product.
The ideal cooking temperature is reached when dropping some water, it turns instantly into tiny rolling bubbles.
Reduce then the heat by a third. You can now place the meat in the pan on its flat side.
It will stick initially but will be easily lifted from the pan once moisture will be appear on the surface of the meat. Turn the meat over and proceed the same way on the other side. For “medium” cooking, turn the heat to a minimum, add the lid on and leave it to cook for a few minutes.
Cooking at low temperature: Use very little water. Braising should be done on a very gentle heat, with the lid on, to avoid evaporation. Tender vegetables, fish, poultry and meat will retain all of their mineral, salts, trace elements, and vitamins.
Boiling: Add salt when water starts boiling, making sure it dissolves completely.
Oven cooking: All Stainless Steel CRISTEL products with detachable parts are designed for oven cooking up to 550ºF, including glass lids up to a temperature of 400ºF.
Avoid thermal shocks (hot/cold, from the fridge to the oven, for example, etc.).
The thermo-diffuser base ensures even heat distribution on all cooking surfaces, while being ovenproof and dishwasher safe.
