INGREDIENTS
- 3 cups flour
- 1 oz fresh yeast
- 2 eggs
- 8 oz butter
- 5 oz sugar
- 1/2 cup milk
- 1 pinch of salt
- Dark chocolate, white chocolate, milk chocolate…
- 4 cups cooking oil
METHOD
Place the flour, sugar, salt, eggs, melted butter and the yeast after diluting in warm milk in the bowl of the stand mixer.
Knead for 5 minutes, then cover with a tea towel and allow to rise for an hour and a half.
Spread the dough using a 0.4 inch (1 cm) rolling pin, then cut out circles of around 8 cm diameter.
Place a square of chocolate on top of each circle, using a variety of chocolates.
Fold the dough over the chocolate to make a ball and allow to rise for 30–45 minutes.
Heat the oil in the sauté pan to about 340 °F and cook the donut holes for 3–4 minutes on each side.
Place your donut holes on paper towels and sprinkle with sugar.
Tips: You can add flavor to your donut holes by adding vanilla extract to the dough.
