Although winter may seem to drag on for an eternity, there’s always one surefire way to get you warmed up of an evening – soup! Soups come in all shapes and sizes and are surprisingly simple to prepare. They are also a great option when cooking for a large number of people as you can simple increase the quantities without too much hassle – just make sure your pot is big enough! We’ve put together a selection of soup recipes, which are all unique in their vibrant backgrounds, flavors and textures, for you to enjoy.

FRENCH ONION SOUP

Feeling uninspired in the kitchen with the February chills? Perhaps a delicious, seasonal French Onion Soup will help to warm you up and restore your faith in the simplicity of cooking. This historic French classic has its origins in the Burgundy region of Eastern France and is surprisingly simple to put together. There are only a handful of easy-to-find ingredients and what’s more, this dish is a one-pot wonder. The aromas of onions sizzling in butter and enhanced by some fresh thyme will get mouths watering in no time.

French Onion Soup is also great for using up any not-so-fresh bread you may have lying around the kitchen. In France, not only is this soup a very popular winter menu item, but it is also traditionally served towards the end of the evening at weddings as it is considered to be a friendly meal best shared among your nearest and dearest. The French are known for taking great pleasure in the little things such as good company, food and drink. So, get into the spirit and enjoy dabbling in a little hearty French cuisine. THAI STYLE MUSSEL SOUP WITH COCONUT MILK

For those who enjoy the excitement and freshness of south-east Asian flavors, we have a variation of the traditional and very popular Tom Yam (or Tom Yum) soup from Thailand. There are two Thai words used to compose the soup’s name - Tom refers to the boiling process, while yam refers to a spicy and sour Thai salad. Tom yam is easy to prepare and is characterized by its distinct hot and sour taste, with fragrant spices and herbs generously used in the broth.

The soup is traditionally made with shrimp, yet here we have given it a new spin with mussels. Our simple recipe includes Thai essentials such as coconut milk, lime and lemongrass that are sure to wow your guests. You can adapt the chili content in the soup according to your personal preference, or otherwise serve a small bowl of chili flakes on the table for those who wish to add a little extra punch to their soup.



ASPARAGUS AND AVOCADO CREAM SOUP

Did you know that you could make a delicious creamy soup from avocados and asparagus? Avocados are a highly nutritious fruit and are packed full of potassium, vitamins and antioxidants and asparagus, while asparagus is a geat source of vitamins A, C, E and K. It is ideal served as an appetizer or entrée at dinner parties, hot or cold.

Our recipe is as simple as frying up a shallot, and pieces of asparagus adding water to twice the volume of asparagus and simmer for 20 minutes. Then blendi it with avocado, some crème fraiche and a touch of chili paste and lime to really bring out the best in this unique flavor combination. The velvety texture and fresh flavors certainly make it a dish to remember.
